Just in time for Memorial Day, here’s a recipe to help ring in the summer season! Inspired by a guy in the kitchen where I work, who each morning juices a few watermelons for us staffers to refresh ourselves with. I took home the inspiration and added rum to it. The “personal watermelons” I’ve been seeing in stores are perfect if you only want to make a few.
Watermelon Cooler Cocktail
makes about 4 drinks
1 cup juice from one small, seedless watermelon*
Juice from 2 limes
1-1″ section of fresh ginger, grated on a microplane or the fine side of a cheese grater
8 oz silver or white rum
Place all the ingredients into a large cocktail shaker that is filled with ice. Shake. Pour into four glasses that are half-filled with crushed ice or fresh cubes. Garnish with mint leaves and a slice of lime. Ah! Sweet summertime.
*To juice a watermelon, slice off the top and bottom (where the stem used to be and the opposite pole.) Stand the melon upright on one of its new flat ends, and using a sharp chef’s knife, remove the rind in 1″ slices, following the curve of the melon on the way down. When you get all the way around, flip the melon over onto the other flat side and get any greenery you missed. Cut the melon into chunks and put in food processor. Pulse until reduced to mush, then strain through a colander or chinois.
