  • I am an ICE alum. this post got me thinking of the salad we made in class with duck confit and chestnuts. But I like your take, duck confit is so rich, it needs some acidity provided by the oranges. Love what you are doing. Keep up the great work.

Curried Pumpkin Soup

I deviated pretty far from this recipe at today’s farmer’s market, but my new friends in Katonah-Lewisboro didn’t mind at all! The big reason for changing it was that there were no pumpkins when I arrived. A few different winter squashes took the place of the pumpkin and it was delicious.

      Hi Chrissy!

      Thanks for coming down! I didn’t use feta because the cheese dude at the market didn’t have any, so I substituted a medium-hard aged sheep’s milk cheese that he had. You can use any cheese you like, as long as it is firm enough to be grated pretty fine. Test the recipe and let me know how it comes out!

Sweet & Cheesy Corn Chowder
