Meanwhile, here’s a delish recipe for sweet potato fritters. When it starts with bacon and ends with maple syrup, how can it be bad?!
Sweet Potato & Bacon Fritters
2/3 c milk
2 eggs, beaten
2 tbsps butter, melted
1 c all-purpose flour
1 tsp baking powder
2 c shredded, uncooked sweet potatoes
4 slices bacon, cooked & crumbled
maple syrup for dipping
In a large bowl, whisk together the milk, eggs and butter. Add the flour, baking powder, sweet potatoes and bacon. Stir to combine. Its really easy to mix if you use your hands.
Heat 2 inches of vegetable oil in a large, heavy bottomed pot over medium high. Test the oil by by dropping a small amount of the batter into the pot. If it sizzles immediately, its hot enough to cook in.
Drop the sweet potato batter by tablespoons into the hot oil. When the bottom is browned, flip and cook until the other side is golden too. Remove fritters from the pot and drain on a cooling rack or on paper towels. Serve with maple syrup for dipping.
