    Tortellini truly is awesome stuff. However, regular all purpose flour won’t give the same sort of consistency or flavor as you’re probably used to from pasta in the store. Regular pasta is made with durum wheat flour, which is super hard and really high in protein. This sort of flour isn’t usually sold in normal grocery stores. If you find durum wheat flour in a bulk food or health store, it will probably be coarsely ground and sold as semolina flour. Coarse semolina flour can’t be used to make pasta, either, seeing as it won’t form a good flour. So, if you don’t have access to durum flour, you should expect your pasta to be softer and wetter than the stuff you get at the store.
