I have all sorts of pickled packed away thanks to Hurricane Irene. To make Indian-flavored pickled red onions, I refer to the recipe for Radish Relish on page 243 in the FABULOUS book Put ‘ em Up! by Sherri Brooks Vinton. I followed the recipe, substituting sliced red onions for radishes, omitting the diced onion and voila: a condiment as perfect for tandoori as turkey wraps. I highly recommend adding her book to your library!
